Late 90s/early 2000s with the big three Florida schools all dominant powers in the sport would be a good choice, but the two-parter on the U has already been done.
The rise and fall and rise again of PSU would be fascinating. Much like the OJ documentary, a filmmaker could use that to tell a bigger story than just sports.
Even the buildup to massive TV deals and conference realignment would be wild if you could actually get people to talk about what those meetings were like. Maybe in another 20 years, schools would be willing to talk about what went down and what almost went down.
