OT: Seafood Gumbo

Making a big pot today. Lent's coming, great way to use up alot of accumulated freezer seafood. My kitchen smells amazing. It took me an hour just to get the roux to the proper color. By the way, didn't do a "dry January" but I am going to do a dry Lent. I just find Lent is a perfect time to try and make a health improvement (giving up fried foods like wings too). Sort of not just hoping to drop some weight but just a general hitting a reset button.

I will attach pictures as I finish adding the seafood later this afternoon.
