Last week would have been an AAC crew (where the officiating quality is worse, trust me.)

My mistake. I was thinking the UCF game; I forgot last week was Delaware.

They try to keep the crews together as much as possible, but it isn't always possible do to some of the guidelines they use for assigning games. Most officials know the games and the crew they are working with about a month in advance.
